Trilogy Coffee Roasting Co. is a small batch specialty coffee roaster located in historic downtown DeLand, Florida, founded by Clay and Michelle Cass. The company began with a passion for coffee roasting in a laundry room ventilated with a box fan, evolving from humble beginnings at the DeLand Farmer's Market in Artisan Alley to becoming a cornerstone of the local coffee community. The name "Trilogy" represents their philosophy of three interconnected stories that create the perfect cup of coffee: their coffee (sourcing from origin), their company (craft of roasting and brewing), and their community (the final story completed when customers enjoy their coffee). Clay Cass, the owner and head roaster, developed his expertise after moving to DeLand in 2005 and learning from a friend experienced in coffee roasting. The company has been serving wholesale customers since 2014, demonstrating their commitment to quality and reliability. In May 2015, they opened their first cafe inside a small roasting space at DaVinci Design Studio, but quickly outgrew the location. By early 2016, they relocated to their current location on Georgia Avenue, completely renovating a vacant storefront and attached garage to create both their roasting facility and cafe. Trilogy Coffee Roasting Co. specializes in ethically sourced, specialty grade coffee with maximum transparency regarding origin. They manually roast each batch on a 12-kilo Diedrich roaster, applying well-crafted roast profiles to highlight the inherent flavors of each coffee. Their approach emphasizes quality control at every step, from farm to cup, ensuring that farming communities are fairly compensated. The company operates a full-service cafe featuring espresso drinks made with their house blend "Sangre y Trueno" on a 2-group Slayer espresso machine, pour-over coffees, cold brew (both classic and nitro on tap), and specialty drinks. They partner with local suppliers including Wainwright Dairy for milk, Centro Tea Co. for teas, and various local farms for food offerings. Their cafe team meets Specialty Coffee Association standards for drink preparation and consistency. Beyond coffee, Trilogy Coffee Roasting Co. serves as a community gathering place, embodying Clay's vision of a cafe "devoted to the love of words and ideas, of friendship and conviviality, powered by coffee." They have expanded their footprint with plans for a second location called Trilogy Kitchen, demonstrating their continued growth and community commitment in the DeLand area.
