Reboot Roasting was founded in early 2015 by Matt Boshart, a self-described nerd with a passion for people, conversations, and coffee. Located in Bellevue, Nebraska, just south of Omaha, the company started with the goal of roasting fantastic specialty grade coffee, meeting awesome people, and being the most approachable coffee roaster around.
Matt's journey into coffee roasting began as a geeky pursuit when he decided to build his own coffee roaster—a creative combination of a Stir Crazy popcorn popper and a Sunpentown convection oven. Despite burning his first batch, he fell in love with the craft, drawn to the stats, figures, and data points that define quality coffee roasting.
The company operates from a production facility in Bellevue, using a Diedrich IR12 roaster—a 12kg capacity machine built in Ponderay, Idaho. This upgrade from their original 5kg Ambex roaster nearly tripled their production capabilities. The roasting process is entirely manual, with no automation—relying on sight, sound, and smell to bring out the best in each bean.
Reboot Roasting specializes in small-batch, hand-crafted coffee that's roasted to order. They focus on single-origin, specialty-grade beans that score 80 or higher on the specialty coffee grading scale. Their commitment to freshness means most bags are delivered within a few days of the roast date. The company offers free delivery throughout the Omaha metro area every Thursday and maintains a philosophy that "coffee should be fun."
