Shotgun House Coffee Roasters was established in 2017 and opened to the public on April 15th, 2018. The company was co-founded by Eddie Laughlin and Jessica Callery, who began their coffee journey with humble beginnings, roasting coffee beans on a tabletop Buckeye BC-2 2-kilo roaster on the screened-in front porch of their shotgun-style house in the Tobin Hill neighborhood of San Antonio. On weekends, they would sell their coffee to passersby headed to local restaurants for brunch, conducting what was essentially a bootleg roasting operation before going legitimate. After approximately six months of buildout, the company transformed a former CrossFit gym space inside San Antonio's Warehouse 5 complex into a 1,500-square-foot roastery cafe. Warehouse 5 is a longtime sewing factory that has been converted into a multi-suite creative space. The roastery is described as a hidden gem on San Antonio's near Westside, equipped with a San Franciscan SF-25 roaster where they proudly roast and package specialty coffee on-site. The cafe features a custom 16-foot butcher-block coffee bar built by Eddie Laughlin and his friend Victor Montez, which took over a month to finish. The bar has an espresso finish with Texas cedar on the front for a raw, cabin-like feel. The establishment emphasizes the sensory experience, combining the aromas of wood and coffee in their unique space. Shotgun House Coffee Roasters offers a full lineup of espresso drinks, breakfast tacos, and pastries made in-house, along with craft beer and wine. Customer favorites include the iced horchata latte, salted-caramel latte (using caramel syrup from Pearl Farmers Market favorite Wildflower Caramels), chai, cold brew, and an always rotating list of pour-over options. With the exception of their salted-caramel sauce, all syrups are handcrafted in-house. The business focuses on ethically sourced coffee beans, primarily sourcing from La Bodega in 50-pound portions to maintain flexibility and access a variety of origins. They roast using their visible 6-pound-capacity San Franciscan machine, and employ equipment from Bunn and Eureka for grinding, Fetco for brewing, and a two-group Rocket Boxer for espresso. The company has expanded beyond their flagship Warehouse 5 location, opening a satellite location in San Antonio's Southtown neighborhood. They operate both retail and wholesale programs, serving restaurants, cafes, offices, and other businesses throughout San Antonio and beyond. The founders emphasize creating a community space with events like movie nights, ping pong tournaments, and art pop-ups.
