This exceptional coffee showcases the renowned Yirgacheffe region of Ethiopia, where 400 smallholder farmers cultivate heirloom coffee varieties in the shade on steep mountainsides. Grown at an extraordinary elevation of 2,000-2,200 meters, these beans develop complex flavors enhanced by an innovative anaerobic natural processing method. The cherries undergo oxygen-free fermentation in sealed bags for 3-7 days before being dried on raised beds for an additional 18 days. This special process amplifies the fruit-forward profile, creating an extraordinary cup with pronounced notes of black cherry, mango, lemonade, pineapple, and peach.
